Friday 'hurry-up' before we leave lunch

OK, I couldn't just leave you without today's lunch :D
So here it is... some chicken breasts chopped into small pieces and spread with Kotany 'Skrivnosti Latinske Amerike - Salsa de Jucatan' spices mix. These are amazing, I bought all five or six of them (available in Slovenia at least) different mixes, Chinese, Thai, Oriental... they work great with everything, poultry or fish, or basically any other meat, just play with it.



Ok, anyway I'm in a bit of a hurry (see the title!!!!) so let me speed up this recipe :)
You put some sunflower oil into a wok or some other similar pan, a bit higher than usual pans so you won't have to clean afterward too much :D Throw in chicken and wait till it gets 'white' - it actually won't because you spread all the spices over it before. If you want you can also spritz juice of a half of lemon just too ease down the spiciness :)
When the water from the meat is gone just add some tomato juice, or mashed tomatoes and leave for five minutes to get the meat soaked in it. In the mean time slice one tomato or two, but it will give you a more watery texture. You then add about 140g sweet corn (you can use Valfrutta or similar, just toss it in). You add some salt, taste if everything is spicy enough for your taste. If not, just add some more of the spice mix. And you're done!!!




Even though this was a salsa tasting dish I used couscous because it has its own taste but not too much, but you could use pasta or rice as well :)

I prepared green salad and a bowl of thinly sliced cucumbers just lightly salted :D I love it that way!!!
