Lemony pasta

hihihi :I I know my previous post was about rice with something :) went a bit too lemony. But today's recipe doesn't involve lemon. Unless you drink it - ice tea for instance.



By the way I used 'Mango and friends' tea mix from Cha (Ljubljana old Centre and City park shopping centre and Šiška Mercator shopping centre) for my ice tea and it came out great! Real fresh with a sliced lemon per about a litre and a half of chilled tea and some ice cubes :)

Ok back to the food... some barilla pasta. Take some pancetta and marjorie and basil and put it in a pan. Wait till pasta is done and pour it into the pan. Take away water first, please :) mix. Add two full table spoons of light sour creme and add some capers and smoked cheese if you like it. I love it, but all the same I think it went well with everything.

You can add some Parmesan cheese just before serving. :D DONE!



Rice.... and something else

Hi, it's me again. And bye, again. Since I'll be off for the weekend in the vast lands of internet lackness :) I will give you the honour of two meal posts :)

First, yesterday's lunch... not so happy with it, but was kinda learning experience for me :) Everything where it should though :)

So I had some shrimps, tomatoes and Gorgonzola cheese. I used rice, since its taste is so plain and can be mixed with almost everything. And this came out.





I used Kotany (already mentioned in one of earlier posts) Orient spices mix and one lemon to marinade the shrimps. I then sliced three fresh tomatoes (it's great to have them all fresh and juicy now when warm days are coming) and put them into a hot baking pan, with a few droplets of olive oil. After soaking shrimps for 5-10 minutes I poured the lemony-spice mix to the tomatoes so they got a bit of the taste. I took the tomatoes out of the pan and tossed in the shrimps and some peanuts. After about a minutes I added some Gorgonzola cheese and tomatoes from earlier.

What you get doesn't really look too nice, and it tastes a bit too lemony, so if you leave the lemon or only use a half it will be just ok.

Friday 'hurry-up' before we leave lunch

OK, I couldn't just leave you without today's lunch :D
So here it is... some chicken breasts chopped into small pieces and spread with Kotany 'Skrivnosti Latinske Amerike - Salsa de Jucatan' spices mix. These are amazing, I bought all five or six of them (available in Slovenia at least) different mixes, Chinese, Thai, Oriental... they work great with everything, poultry or fish, or basically any other meat, just play with it.



Ok, anyway I'm in a bit of a hurry (see the title!!!!) so let me speed up this recipe :)
You put some sunflower oil into a wok or some other similar pan, a bit higher than usual pans so you won't have to clean afterward too much :D Throw in chicken and wait till it gets 'white' - it actually won't because you spread all the spices over it before. If you want you can also spritz juice of a half of lemon just too ease down the spiciness :)
When the water from the meat is gone just add some tomato juice, or mashed tomatoes and leave for five minutes to get the meat soaked in it. In the mean time slice one tomato or two, but it will give you a more watery texture. You then add about 140g sweet corn (you can use Valfrutta or similar, just toss it in). You add some salt, taste if everything is spicy enough for your taste. If not, just add some more of the spice mix. And you're done!!!




Even though this was a salsa tasting dish I used couscous because it has its own taste but not too much, but you could use pasta or rice as well :)

I prepared green salad and a bowl of thinly sliced cucumbers just lightly salted :D I love it that way!!!

Thursday lunch - gnocchi, mushrooms, olives and capers

So after waiting for way too long with my today's lunch, it was up to my imagination to figure out what to make...

I took some olives and some capers, few droplets of cream and there were few eggs left.

I was so hungry by the time (and it was less than half an hour) I actually started to eat, that I didn't take any photos... so today no photos.

So here it goes. I used some gnocchi and boiled them. I put some olive oil in the pan and a small bag (about 125g) of frozen chopped mushrooms (šampinjoni po slovensko :) or portobello mushrooms in English, I believe). I usually buy them and use them fresh, but sometimes I buy them a bigger package, slice them and put them in the freezer. You can use them straight from the freezer as they release just enough water. I added some salt (a pinch or so), some ginger (just for the fun of it) and a few beans of coriander and some dried rosemary. I like to experiment with herbs and spices :)
I sliced some olives and added few capers. It depends on whether you like a more sourish taste by adding some sour cream, or if you don't, add some ordinary cream that I occasionally find in the fridge ;) (occasionally because it usually ends up in a pie). You add cream just before you take the whole thing of, or before you put in the gnocchi in my case.
And since I got some fresh eggs left, I put one in as well. Eggs are full of proteins, so an egg here and there is just fine fr you, especially if you are not so keen on meat (like me).

And there you are! Simple, fast and great in taste.

You can also make this with basically any type of pasta, but I would recommend smaller ones, like Barilla's Farfalle, Fusilli, Penne Rigatte, Pipe Rigatte...

Well... it's not like I'm opening a restaurant, but finally I hope I managed to make this blog at least as close to what I want it to be as possible.
